Donut Discussions: Chef Mike Solomonov & Steve Cook of Federal Donuts

Stephen Torres, founder and director of Bill of Fare, a series of events throughout the country that fuse food and culture, announces A Discussion With Chef Mike Solomonov & Steve Cook of Federal Donuts, the James Beard award-winning restaurant partners from Philadelphia behind the acclaimed Zahav, doughnut empire Federal Donuts, and more. The candid chat will take place on Thursday, September 21 at 8 p.m. at Metro Chicago (3730 N Clark St, Chicago, IL 60613). Doors open at 7 p.m. and tickets are $38 for General Admission while seated tickets are $44. Tickets can be purchased here.

Chicago’s popular independent music venue will set the stage for the duo to tell their culinary journeys and discuss their latest cookbook, Federal Donuts: The (Partially) True Spectacular Story. Each ticket includes a pre-release signed copy of the cookbook–it does not officially launch until September 26. The authors’ first cookbook, Zahav: A World of Israeli Cooking, won the 2016 James Beard Foundation Book Award for Best International Cookbook as well as Book of the Year. In addition, all attendees will receive a Doughnut Vault donut as well. The popular Chicago donut destination is referenced in the cookbook’s chapter titled, “Donuts That Are Better Than Ours.”

Torres explains the idea for the event. “Our intention is for this collaboration of acclaimed chefs talks in iconic music venues settings to develop into a series around the country. Chicago gets to be our guinea pig.” The Federal Donuts team are no strangers to music partnerships. They recently served up a special donut every night of Phish’s 13-show “Baker’s Dozen” residency in New York City.

For the Chicago event, Solomonov, who was also recognized as James Beard Foundation’s 2011 Best Chef: Mid-Atlantic and 2017 Outstanding Chef, and Cook will share the “zany chronicle” that led to the rise of America’s hottest donut empire. Knowing nothing about making donuts, the duo bought a used “donut robot” from a Craigslist stranger in a parking lot. What could go wrong? After working out the kinks, the partners developed an exquisite dough delicately spiced with Middle Eastern aromatics like strawberry lavender, guava poppy, pomegranate Nutella and salted tehina. Federal Donuts’ concept is complete with its savory companion–shatteringly crispy Korean-style fried chicken. The discussion will also include a Q&A with the audience as well.

Bill of Fare is the evolution of Torres’s special collaboration dinners and aspirational discussions with top chefs from around the country. This year’s programming explores the intersection of food with music, arts and overall culture. As a former chef, the culinary entrepreneur has dedicated his career to highlighting the passions and perseverance of the greatest leaders in hospitality.
